Northern English Brown Ale
Like Comfort Food, But Beer
The Northern English Brown Ale style is a rich, yet approachable English Ale style. The nutty character imparted by specialty grains is the hallmark of this
amber beer. Toffee, Nutty, Caramel flavors should all be present wrapped in an Amber, clear beer. Hops are English, and noticable yet not prevalent.
There should be a little bit of residual sweetness as with many English style beers, but this should be quite subtle.
The Beer
Along with a base of English malt (like Maris Otter), rich adjuncts like Chocolate Malt, Special B, and Special Roast can be used to give this beer its rich, nutty
flavor.
Hops are, of course, English - Challenger, Fuggle, E.K. Goldings, etc.
Yeast should be one of the English Ale strains and preferably a more attenuative if you have a choice. If you choose very attenuative yeast, the addition of some
honey malt may be appropriate to provide a little bit of sweetness.

1/4 lb. - Chocolate Malt
1/4 lb. - Special B Malt
1/4 lb. - Special Roast Malt
Hop Schedule (27 IBU)
1 oz - Challenger (60 Min.)
1 oz - Fuggles (1 Min.)
Yeast
Wyeast London Ale Yeast (#1028) - 1800 ml starter
Mash/Sparge/Boil
Mash at 154° for 30 min.
Sparge as usual
Boil for 60 minutes
Cool and ferment at about 68°
