Peated Malt
Characteristics
Peated Malt is a malt style that has been treated by being smoked over a fire made from peat moss.
This malt provides a pronounced smoky, spicy aroma and flavor to your beer. Please note, this malt should be used
in moderation as a little goes a long way.
Traditional use of Peated Malt is in Scottish Ales.

10 lbs. - Golden Promise Malt
1/2 lb. - Victory Malt (40L)
1/4 lb. - Chocolate Malt
1/8 lb. - Peated Malt
Hop Schedule (22 IBU)
1 oz - East Kent Goldings hops (60 min.)
1 oz - East Kent Goldings hops (2 min.)
Yeast
White Labs Edinburgh Ale Yeast (WLP028) - 1800 ml starter
Mash/Sparge/Boil
Mash at 152° to 154° for 60 min.
Sparge as usual
Boil for a total of 90 Minutes
Cool and ferment at 67° to 70°
