Carastan Malt
Characteristics
Carastan is a malt similar to Crystal malt produces by the Crisp Malting group in the UK. The flavor, is
a bit more of a Toffee sort when compared to American Crystal.
The product is sold in ranges rather than one particular Lovibond value (13 to 17L and 30 to 37L.)
When formulating a recipe, I always just take the average Lovibond value and use that.

Extract Recipe - Table Rock Nut Brown ::: 1.054/1.015 (5 Gal)
Grain Bill
6 lbs.- Light extract syrup
1 lb. - CaraPils malt
0.5 lb.- Carastan malt
6 oz. - Brown malt
4 oz. - Crystal malt (120 °L)
2 oz. - Black Patent malt
2 oz. - Chocolate malt
Hop Schedule (18 IBU)
1 oz. - Willamette hops (60 min.)
Yeast
White Labs California Ale Yeast (WLP001) - 1800 ml starter
Mash/Sparge/Boil
Steep Grains at 150 for 30 min.
Bring to boil, add half extract.
Add rest of extract near end of boil
Cool and ferment at 66° to 69°
